These enchiladas are packed with protein and topped with a creamy white sauce that will leave you dreaming for more!

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, garlic powder, onion powder, cumin, salt, and pepper.
  3. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Place the filled tortillas seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the top of the tortillas.
  7. Spread sour cream on top and sprinkle with cheese.
  8. Bake for 25-30 minutes until cheese is bubbly.
