  • 3 pounds pork shoulder
  • 2 cups apple cider
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups carrots, sliced

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the pork shoulder with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium heat and brown the pork on all sides.
  4. Remove the pork and add onions and garlic, sautéing until soft.
  5. Return the pork to the pot and add apple cider and thyme.
  6. Cover and braise in the oven for 3 hours, adding carrots halfway through.
  7. Once tender, remove from oven and let rest before slicing.
