  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese, your choice
  • 8 flour tortillas
  • 1 tablespoon taco seasoning

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cheese (reserve some for topping), and taco seasoning.
  3. In a baking dish, layer three tortillas on the bottom, then spread half of the chicken mixture on top.
  4. Repeat the layers, finishing with tortillas and topping with remaining cheese.
  5. Bake for 25-30 minutes, until heated through and cheese is bubbly.
  6. Let cool for a few minutes before serving.
