Enjoy these delicious homemade chicken enchiladas that are easy to prepare and perfect for any meal!

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, 1/2 cup of the enchilada sauce, and half of the cheese.
  3. Warm the tortillas in a dry skillet to make them pliable.
  4. Place some chicken mixture in each tortilla, roll them up, and place them seam side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  6. Bake for 20-25 minutes until heated through and cheese is bubbly.
  7. Serve with sour cream and cilantro on top.

Notes

  • For extra flavor, add black beans or corn to the chicken mixture.
  • These enchiladas can be made ahead and frozen.
