- 2 cups shredded cooked chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, 1/2 cup of the enchilada sauce, and half of the cheese.
- Warm the tortillas in a dry skillet to make them pliable.
- Place some chicken mixture in each tortilla, roll them up, and place them seam side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
