  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, etc.)
  • 1 package frozen dumplings
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the diced onion, garlic, and ginger, and sauté until fragrant.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the vegetable broth and coconut milk, bringing the mixture to a simmer.
  5. Add the mixed vegetables and dumplings, cooking until the dumplings are heated through.
  6. Stir in the soy sauce and lime juice, adjusting to taste.
  7. Serve hot, garnished with fresh cilantro.
