  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat butter, brown sugar, and granulated sugar until creamy.
  4. Add the egg and vanilla, then mix until well combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  7. Scoop dough and form into balls, then make an indentation in each ball with your thumb.
  8. Fill each indentation with cream cheese mixture.
  9. Bake for 10-12 minutes or until edges are golden.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
