  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium sweet potatoes, diced
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, juiced
  • 2 cups steamed broccoli

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix Dijon mustard, maple syrup, olive oil, garlic powder, salt, and pepper.
  3. Coat the chicken breasts in the maple Dijon mixture and place them in a baking dish.
  4. In a separate bowl, toss the diced sweet potatoes with lemon juice and thyme.
  5. Arrange sweet potatoes around the chicken in the baking dish.
  6. Bake for about 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  7. Remove from the oven and let it rest for a few minutes before serving.
  8. Serve with steamed broccoli on the side.
