  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  6. Fold in the dried cranberries and white chocolate chips.
  7. Spread the batter into the prepared baking pan and bake for 20-25 minutes.
  8. While the bars are cooling, prepare the frosting by mixing the cream cheese, powdered sugar, and lemon juice in a bowl.
  9. Spread the frosting over the cooled bars and cut into squares.
