  • 4 chicken thighs
  • 1 cup apple cider
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups shredded cabbage
  • 1 cup carrots, grated
  • 1/2 cup red apple, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup apple cider vinegar

Instructions

  1. In a bowl, mix apple cider, soy sauce, honey, cinnamon, garlic powder, salt, and pepper.
  2. Marinate chicken thighs in the mixture for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Place marinated chicken in a baking dish and pour remaining marinade over the top.
  5. Bake for 25-30 minutes or until the chicken is cooked through.
  6. In another bowl, combine cabbage, carrots, apple, cilantro, and apple cider vinegar to make the slaw.
  7. Serve the chicken with the crisp autumn slaw on the side.
