A delicious and indulgent vegan twist on the classic pecan upside down cake.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup vegan butter
  • 1 1/2 cups all-purpose flour
  • 1 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the vegan butter and brown sugar together.
  3. Once melted, stir in the pecans and pour the mixture into a cake pan.
  4. In a bowl, combine almond milk and apple cider vinegar, letting it sit for a few minutes.
  5. In a separate bowl, mix flour, baking soda, and salt.
  6. Combine the wet and dry ingredients, then pour over the pecan mixture in the cake pan.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Let cool slightly before inverting onto a plate.
